Castella Cake with unsettling characteristics
- Flour
- Salt
- Sugar
- Eggs
- Vanilla Extract / Almond extract
- Olive oil/ Coconut Oil
- Honey
- Vinegar
- Dark chocolate
- Cocoa powder
- Milk
- Take 70 g of olive oil (or any natural cooking oil) in a pan and add 36 g of dark chocolate, 64 g of whole milk and put it on low heat and mix. Turn off the heat and mix 40 g of natural cocoa powder, add in 72 g of flour, a tbsp of almond or vanilla extract and 6 eggs yolks and whisk.
- After that, whip the egg whites with tsp of vinegar and a pinch of salt to soft peak consistency. And then add in 100 g of honey or sugar and mix to smooth consistency.
- Now combine the two mixtures and mix to incorporate the ingredients. Pour it into a baking pan and top it off with chocolate chunks or nuts.
In the Oven
Then steam it out with a water bath in a preheated convection oven for an hour at 180o C.
Melted dark chocolate can be added on top when ready.
